Easy Bacon Wrapped Grilled Scallop Kabobs

Summer grilling isn’t just for burgers, hot dogs and chicken breasts. In fact, grilling is a great way to enjoy some of your favorite seafood dishes, as well. This simple recipe only takes a few minutes to prepare – and is super delicious!

Grilled Bacon-Wrapped Scallop Kabobs
1 pound large sea scallops
1/2 pound bacon
1/2 tsp salt
1/2 tsp pepper
2 tsp finely minced garlic
1 Tbsp extra virgin olive oil
1 tsp cornstarch
16 to 20 stainless steel metal skewers or wooden skewers

(To prevent burning, pre-soak wooden skewers in water for at least one hour).

Rinse scallops thoroughly under cold water to remove any grit. Carefully remove any small muscle on the side of the scallop, then pat dry.

To remove excess fat, place bacon slices on microwave-safe plate lined with paper towels. Cover bacon with additional paper towels to prevent splattering.

Microwave for approximately 30 seconds. The bacon will still be soft and pliable. DO NOT overcrisp at this point, or you won’t be ablet o wrap it around the scallops.

Wrap bacon slices around the sea scallops.

Combine salt, pepper, fresh garlic, oil, and cornstarch in a small bowl and brush both sides of scallops with this marinade. Divide scallops evenly and thread onto skewers.

Spray the grill rack with non-stick cooking spray, then preheat your grill to medium-high.

Place scallop skewers on the grill for 1 to 2 minutes, until they start to brown and grill marks form. Then, turn the scallops and grill the other side for an additional minute or two.

Remove and serve immediately. Grilled scallops are great with a fresh green salad or your favorite dipping sauce.
