This is great with my favorite Dill and Lemon Salmon recipe. It’s also really good with chips (use this instead of store-bought salsa) or with grilled chicken.
Sweet and Spicy Salsa
1 cup fresh pineapple, cut into small cubes
1 red bell pepper, cut into 1/4″ pieces
1 yellow pepper, cut into 1/4″ pieces
1 cup black beans
1/2 cup red onion, finely chopped
1/2 cup fresh cilantro, finely chopped
1 jalapeno pepper, seeded and minced
2 limes, juiced
2 tsp brown sugar, packed firm
salt and pepper to taste
Combine all ingredients in a medium bowl. Cover and refrigerate 1 hour. Stir thoroughly before serving.
