The classic mojito is a rum drink, but that doesn’t mean you can’t get creative with it. This version features tequila and is perfect for Cinco de Mayo or whenever you want to try something a little different. They are also great with grilled tequila-marinated shrimp skewers – no sense letting any leftover tequila go to waste, right? 🙂
20 fresh mint leaves
1 fresh lime, quartered
1 cup club soda, chilled
1/3 cup good quality tequila
enough ice to fill 2 glasses
To Make Simple Syrup:
In a small pan over medium-high heat, bring water and sugar to a boil. Stir until sugar has dissolved. Remove from heat and allow to cool.
Put 10 fresh mint leaves and a lime wedge in bottom of cocktail shaker. With a cocktail muddler, thoroughly mash the leaves and limes to release the oil and juice into the container. (affiliate link)
Add remaining mint leaves, 2 lime wedges and 2 tablespoons simple syrup to shaker and muddle completely.
Add club soda and tequila to shaker and shake vigorously until all ingredients are thoroughly combined. Taste and add additional simple syrup, if desired.
Fill two glasses with ice and divide the contents of the shaker between them. Garnish each glass with fresh sprigs of mint and slices of lime (slice remaining wedge in half or peel the zest of another lime). Makes 2 servings
